Don’t be fooled by what you hear on TV when it comes to cooking gear. If you want to sear steaks like the pros, then you need a cast iron skillet. You may be put off by visions of having to season the iron to achieve the proper non-stick effect, but Lodge delivers a great pre-seasoned version that gives you a head start.
The days of teflon are over unless you are truly committed to poisoning your dinner guests, and stainless steel doesn’t always achieve the desired heat consistency required for frying and searing. The best option is iron, which has been around since cooking was performed over an open fire.
Maintenance is easier than one would think. It’s true you have to keep season the pan, even the pre-seasoned lodge, but this is easy to work into your routine, and the truth is: you’re seasoning ever time you use it! Most important: whenever your done with the pan, never use soap to clean it. Some warm water and a damp cloth are all that’s necessary. Afterwards, rub a few tablespoons of veggie oil into the inside of the pan and let it sit for a while. If you ever feel like you really need to give it the full business, rub the inside of the pan with some Crisco and whack it into an oven on 350 for about an hour. That will definitely bake on a nice non-stick coat.
So when you’re ready to ditch your teflon, pick up the Lodge and start cooking like the cowboys used to. You won’t go back to using fancy toxic pans ever again.
